If you can get hold of the ingredients, this cake is simple to make from scratch, with lots of wholesome ingredients. No layering and no icing, it’s all about the flavours and the irresistable smell from the oven will leave your mouth watering!

Cake

Beat together 225g of softened butter, 170g caster sugar and 85g soft dark sugar

Add four large eggs, one at a time and beat well

Sift in 115g of self-raising flour, 200g ground almonds, 1 dstspn chopped candied ginger and a splash of milk and mix 

Pour into a large tin and top thickly with cut pear

Bake at 170°C for 35-45 minutes until firm to touch

Drizzle

Mix 1533 British Hemp Gin with caster sugar and dribble over the top. The measurements are completely up to you, depending on how sweet or boozy you like it!
